Rachel’s Chicken
I just winged this today, and it was good, so here’s my recipe.
Pound chicken breast flat. Place baby spinach and feta cheese in middle. fold over. Coat with egg/milk mixture. Dredge in cornmeal mixed with salt and pepper. Bake at 375F until chicken’s internal temperature is 170F. About 30 minutes.
Serve with pasta and alfredo sauce.
