German Potato Soup
1 onion, chopped
1 leek, trimmed and diced
2 carrots, diced
1 cup chopped cabbage
1/4 cup chopped fresh parsley
4 cups beef broth
1 lb potatoes, diced (don’t make too small… you see why later.)
1 bay leaf
1 tsp black pepper
1/2 tsp caraway seeds
1/4 tsp nutmeg
1 lb REDUCED SALT bacon.
1/2 cup sour cream
put everything except bacon and sour cream into a slow cooker. Cook on high 4-5 hours, or low 8-10 hours, until potatoes are done.
cook and crumble 1 pound of REDUCED SALT bacon. (Was way too salty with regular)
Set aside
Use slotted spoon to remove potatoes from slow cooker. Mash with 1/2 cup of sour cream.
Return potatoes to slow cooker, add bacon, stir well and let cook for a little while longer.
