Chili (Nov 2013)
This tastes pretty good. If you want it spicy… you’ll have to spice it up some more. It’s pretty mild.
1 1/2 lbs lean ground beef
2 cloves garlic, minced
1 cup celery, diced
1 cup green pepper, diced
1 cup red onion, diced
1 1/2 tbsp hot chili powder
1 tsp ground cumin
2 tsp dried oregano
1 tsp ground coriander
1/4 tsp black pepper
1 can 28oz diced tomatoes (do not drain)
1 can 5.5oz tomato paste
1 beef bullion cube dissolved in 1 cup hot water
1/4 cup chopped celery leaves
1 tbsp hickory bbq sauce
1 can 19oz kidney beans, rinsed
1 can 14oz Heinz beans in pork and tomato sauce
3 tbsp chopped cilantro
1/2 lime (juice of)
Fry beef and garlic until no longer pink. Add veggies. Cook until softened. Add spices, tomatoes, bullion, celery leaves, and bbq sauce. Cook for 20 minutes. Add beans. Cook for 10 minutes. Remove from heat. Add cilantro and lime juice.
